I’m making a concerted effort right now to eat a little better, drink a little more water and make myself some tasty treats. Although my obsession with pick n mix will never fade, if I can make more informed choices and try to integrate healthier options into my diet then that’s definitely better than scoffing biscuits. I’m really quite impatient though, so anything that takes too long to concoct is definitely out the window – which is why these quick and easy nutty chocolate bites are my current favourite snack. They contain only a handful of ingredients, require no cooking whatsoever and are full of nutrients that will really do your body the world of good. I love grabbing a handful from the fridge when I hit that 4pm slump, the taste of the cacao powder providing the chocolate flavour I crave while the nuts and dates offer up an energy boost without the slump.
Here’s how you make them… (You do need a food processor to make these work, so it’s definitely worth investing in one if you intend to adopt a slightly healthier lifestyle.) All you need is: one cup of pitted dates, half a cup of almonds, half a cup of walnuts, half a cup of hazelnuts, two teaspoons of coconut oil, two teaspoons of chia seeds and two teaspoons of cacao powder. Literally chuck it all into your food processor and whip it all up until it becomes a sticky blended mess; you want to be able to pick the mixture up and roll it between your fingers so you can create a little ball. If it doesn’t stick, add in a few more dates and a touch of coconut oil until you’re happy with the texture. This quantity should provide you with about 15-20 balls, depending on how big you make them, so just wack them in the fridge to ensure they set.
Once they’re cold they’re ready to be munched on and will last up to three weeks without any deterioration – if they last that long. The added chia seeds and cacao powder will provide you with an incredible source of antioxidants, whilst the nuts are a great source of natural fats and oils. They taste great, are easy to make and provide you with lots of goodness too. I tend to make a batch every couple of weeks at the start of the week so I know I have something to snack on as I go. There’s no right or wrong with this recipe, so just adjust it until you’ve found your perfect match – adding in different nuts, powders and superfoods will still provide a tasty treat that does you good too!
